"VINOS DE HIELO" O "ICE WINES"

Son vinos elaborados a partir de uva que se deja sobremadurar y congelar intencionadamente en la cepa, esto solo ocurre en zonas determinadas con mucho frío como por ejemplo, Canadá o Alemania. Se pueden realizar con uvas blancas o tintas y se deben recolectar a mano en estado de congelación, a unos -6 o -7 grados❄️, para que luego se prensen con los cristales de hielo. La estructura del hielo rompe las células de uva, liberando los azúcares y potencia los aromas. Este método tan original les hace ser dulces, sacando todos los sabores de la uva 🍇. Son vinos muy complejos y costosos. Si tenéis la oportunidad de conseguir alguno, debéis probarlo. Tengo constancia de que han existido algunos en España, pero son muy escasos por el clima.
